Freshly slaughtered in Australia, transported chilled by air and processed in Oman, the whole carcass consists of two legs, two shoulders, and two ribs. The listed weight reflects the farm-provided measurement. After Halal processing and trimming, the final usable portion is about 80-85%, with 15-20%as trimmings, which we pack separately. We prioritize quality and transparency in every cut.
